This salad is great choice for lunch during Summer
There are many benefits of implementing fish recipes in your diet. It is always the best when consumed fresh, but canned Tuna is great alternative and can be used in variety of salad and sandwich recipes.
Tuna is high in Omega-3-fatty acids which is great in reducing cholesterol. It is also rich in potassium and as a result it lowers blood pressure. The amount of Zinc, vitamin C and Selenium is an immune system booster. Iron and vitamin B help with circulation and blood cell count. It reduces depression and stress levels. Tuna is also great for your eye, skin and bone health.
Ingredients
• 2 cans Tuna (Albacore is a great choice, in water)
• 600g your choice of cooked pasta ( penne, rotini, shells)
• 1 medium pepper, small diced
• 2 celery ribs, small diced
• 4 pc green onions chopped
• 1/2 bunch parsley chopped
• 1 jalapeño pepper seeded and small diced
• 1 large tomato, small diced
• 1/2 lemon zest & juice
• 50 ml sour cream
• 100 ml light mayonnaise
• Salt & Pepper to Taste (I always prefer freshly cracked black pepper for the rich flavour)
Method
• Cool freshly cooked pasta
• Drain tuna from the can
• Mix all ingredients except mayonnaise and sour cream with tuna
• Add cooled pasta and seasoning
• Dress salad with mayonnaise and sour cream and adjust seasoning
• Garnish with lemon and fresh parsley
• Chill for 30 minutes before serving
