Vegan Balkan Rice Guvec / Posni Djuveč






This recipe is perfect choice for light Dinner. Rice Guvec is a popular rice dish from Balkans. There are many variations that include meat. During Lent this vegan option is very popular. 
Most commonly used vegetables are onions, carrots, green peas, zucchinis, eggplant, tomatoes and peppers. You can be as creative as you wish, the possibilities are endless!

     Ingredients
  • 2 cups long or medium grain rice (rinsed)
  • 1 medium size white onion small diced
  • 1 celery rib small diced
  • 1 red or yellow pepper small diced
  • 1 medium size tomato small diced
  • 1 small size carrot small diced
  • 2 garlic cloves finely minced
  • 2 tbsp olive or grape seed oil
  • 1/2 cup baby spinach
  • 2 cups water
  • 1tsp Sea salt
  • 1 tsp freshly cracked black pepper
  • 1 tsp chili flakes
  • Great Thyme sprig leaves
  • Arugula sprouts for garnish (or any microgreens you have)
   Method
  • In a medium size pot add oil, onions, peppers, celery and carrots. 
  • Sautee for 5 minutes on medium to high  heat
  • Add minced garlic, tomatoes and rice
  • Keep Sauteing for 3 minutes and add water and seasoning
  • When rice starts boiling add spinach, chili flakes, fresh thyme, stir and taste for seasoning 
  • Adjust heat to low, cover and cook for 15 minutes or until rice is soft and fluffy
  • Do not stir the rice while cooking
  • After 15 minutes lightly mix rice with fork and test if cooked
  • Cover and simmer for more 5 minutes if needed
  • Serve warm garnished with arugula  sprouts
