Super Food Friday
I have decided to try some vegetarian recipes today: Bulgur Burger with Fresh Broccoli Salad & Lemon Garlic Dip.Bulgur is whole grain and full of fiber with a nutty flavour. It is packed with vitamins and minerals and promotes digestion.Very easy to cook , can be used in salads, stews, and various vegetarian dishes. Naturally cholesterol-free and rich in protein it is a great addition to your menu choices.
Bulgur Burger
2/3 cup bulgur1 cup water
1/2 cup Italian parsley
1/3 cup of cilantro
1 Lemon ( zest & juice)
1/2 large Leek thinly sliced
1 shredded carrot
1/2 tsp of cumin
1/2 tsp of paprika
1 garlic clove minced
2 tsp of pimento paste
1 egg
Bread crumbs.
Olive oil
S&P to taste
Bring water to boil and add bulgur. Cover and let it rest for 10 minutes.
Mix bulgur with fork and add all ingredients except bread crumbs and oil. Taste for S&P. You can add pimento paste depending on your palette. Form 200 gram patties and coat them with bread crumbs. Place them on oiled baking tray and bake at 350F for 10 minutes, flip them and bake for 5 more minutes.
Serve with salads or in pita wraps
Lemon Garlic Dip
1/2 cup sour cream
1/2 cup yogurt ( strained)
1 Garlic clove minced
1/2 lemon juice & zest
1/2 tsp pimento paste
1/4 cup dill
1/4 cup parsley
S&P to taste
Mix all ingredients and chill before serving
