Vegan Savory Scones with Scallions and Sea Salt






These scones are made only with vegan butter and almond milk, but they are scrumptious and smell heavenly


      Ingredients
  • 2 cups whole wheat or white flour
  • 175 g vegan butter (cold) + 1 tsp for greasing baking tray
  • 2/3 cup Almond milk + 2 tbsp (separated for brushing before baking)
  • 2 green onions (sliced finely)
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 tsp coarse sea salt (for garnish)
         Method
  • Preheat the oven to 375 F
  • Measure flour, add salt, baking powder and grated vegan butter (make sure that is cold from the fridge, it is easier for grating)
  • Mix with hands until butter is incorporated evenly and flour mix is coarse
  • Add finely slices scallions (green onions)
  • Gradually add almond milk and form the dough
  • Transfer dough to working surface and work it out lightly until you form ball shape (only 2 minutes, do not overwork)
  • Roll out the dough to 1" thickness
  • Cut into rectangular shape and place on greased baking tray
  • Brush with almond milk and sprinkle with coarse sea salt
  • Bake for 25-30 minutes depending on oven (rotate tray after 15 minutes)
Variations: you can add cumin or sesame seeds for garnish.Also, for sweet version you can omit salt, add sugar,  lemon zest and blueberries
