These scones are made only with vegan butter and almond milk, but they are scrumptious and smell heavenly
Ingredients
- 2 cups whole wheat or white flour
- 175 g vegan butter (cold) + 1 tsp for greasing baking tray
- 2/3 cup Almond milk + 2 tbsp (separated for brushing before baking)
- 2 green onions (sliced finely)
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 tsp coarse sea salt (for garnish)
- Preheat the oven to 375 F
- Measure flour, add salt, baking powder and grated vegan butter (make sure that is cold from the fridge, it is easier for grating)
- Mix with hands until butter is incorporated evenly and flour mix is coarse
- Add finely slices scallions (green onions)
- Gradually add almond milk and form the dough
- Transfer dough to working surface and work it out lightly until you form ball shape (only 2 minutes, do not overwork)
- Roll out the dough to 1" thickness
- Cut into rectangular shape and place on greased baking tray
- Brush with almond milk and sprinkle with coarse sea salt
- Bake for 25-30 minutes depending on oven (rotate tray after 15 minutes)
